How to pop popcorn

The kernel is the event. The bag, the tin, and the lockup are packaging. These are the methods that actually pop corn, ranked on flake, hull, oil, health, and whether seasoning stays on the flake.

Types of popcorn

Popcorn is not one SKU. It is a flint-type maize with a pressure-tight hull, two commercially useful flake shapes, and a handful of color lines that taste different after they turn white.

How we score

Atlas scores are editorial, 0 to 5. We score the bowl and whether the pitch is true. A number is a judgment, not a sale.

Finish

Oil, salt, seasoning

Air is the cleanest eat. Oil is the glue. Salt wants a fine grain and a surface that can hold it. The bag is chemistry, not a pot.
